Summer invention of the most typical dessert of Ibiza, Flaó ice cream
Summer arrives and every time we claim more of an icy version of all kinds of food, mojito ice cream, beer ice cream, even the pizza ice cream already exists, we are not a lesser being and invented ice cream, so we created the Frosty version of one of the most typical desserts of Ibiza. This dessert is an original cheese cake tradition of religious holidays, which nowadays is always present in ibiza homes in all kinds of celebrations, and you can buy it in almost all the bakeries on the island.The key ingredient is the cheese, but what really is a characteristic element is the peppermint. Peppermint gives us a touch of freshness that in the frozen version becomes an ideal recipe for summer.You can try this frozen castle in some ice cream parlors on the island, but we encourage you to try it at home with @Ana. Ingredients for ice cream:
– 250 grams of white fresh cheese
– 75 grams of semi-cured cheese
– 2 eggs + 1/2 yolk
– 125 grams of white sugar
– 25 grams of invert sugar + 1 spoon (for when we are going to butter the ice cream)
– 4 large or 8 small peppermint leaves
– 200 ml. Cream
– 100 ml. Milk
Ingredients for the cookie:
– 75 grams of spelled flour
– 32 grams of butter
– 16 grams of icing sugar
– 1/2 egg yolk
– 15 grams of sweet anise
– Small half lemon zest
– 1/4 tablespoon of aniseed in grain.
1º We will elaborate the Biscuit:
We will mix all the ingredients in a bowl, once we make a homogeneous base, we wrap it in a paper film and let it rest in the refrigerator for 30 minutes, so we get a firmer dough to knead. Once the dough was in the refrigerator, shape it into a baking paper, and bake it for 15-20 minutes at 180 °, turning the cookie over half the time to get a crunchy texture .
2º Elaboration of the ice cream:
We will mix all the ingredients with the mixer less the cream and the milk. Once the mixture is done add the milk. After that, we will cook for 10 minutes, and then mix it again with the milk. In another bowl we will do whipped cream, and add it with the mixture of ice cream. Let the ice cream stand for at least 24 hours in the freezer, and mixer ir slowly for 40 minutes, and after mixing with the crushed cookies. To finish put the ice cream in molds, put them in the freezer and, ready!
