The “Greixonera” Recipe
Today we’re focusing on a special and traditional balearic dessert. The easier way to describe it if you don’t know it, it’s an outstanding pudding with cinnamon.
– For the base
6 medium eggs
300gr of sugar
1 litre of milk
9 Spoons of Sugar
– For the pan
Let’s do it:
On one hand, we’re going to elaborate the sugar syrup. Melt the sugar and distribute it on the bottom of the deep pan.
On the other hand, boil milk with cinnamon and lemon rind. You decide how flavorful you want it… Mainwhile, crumble the ensaimadas over the syrup, whip eggs with 300gr of sugar, add the milk and finally to the pan.
Heat it at 160ºC in a “bain marie” two hours. Check with a knife the texture of it passed the time. When the knife comes out clean, it means that your greixonera is done. Let it cool down and it’s done!!
