We interviewed Jian Lin, the japanese chef of Wasa·B

How many years have you been inside the kitchen?

I have been dedicated to the kitchen for over 11 years. It took me 2 years to become a sushi master, and then I worked 7 years for B.For, a famous sushi restaurant in Ibiza.

What is your favorite food?

My favorite food is sushi, no doubt.

What are the details that you try to capture in your cookery?

Everyone has their identity and a process. My secret is to prepare each dish with the same passion and always pay attention to the details. (Check our blog entry here)

What is for you the fundamental ingredient of Japanese cuisine?

It’s hard to decide… Japanese food is all about perfection, a mix of all the flavors that exist. However, I would say that rice is the fundamental ingredient of Japanese cuisine.

And the most representative dish?

The Dragon.

Is there a product that you discovered here in Ibiza and that you have inserted into your kitchen?

We use fresh fruits, that are grown here in Ibiza. We work with local farmers to receive products from the island whenever possible.

How would you define the kitchen of Wasa.B in 3 words?

Quality, service and style.
The quality and freshness of the products are essential, as well as the creativity while cooking. What´s more, the rice we server, is prepared with a secret sauce and that makes it very special.

What would you recommend to try to someone who is going to eat Japanese food for the first time?

To come to Wasa.b, where they can enjoy the best of Japanese cuisine in Ibiza.
