Blueberry Muffin with yoghurt cream | IbizaFoodie
Muffin… Who said Muffin? We want Muffins!! It’s like a magic word for all Sweet Lovers… And if you continue saying that it’s a Blueberry Muffin with Yoghurt Cream be careful, you’re friends can go crazy 😉
150ml corn oil
75ml skimmed milk
1 natural yoghurt
3 spoons of sugar
5 spoons of leavening
2 spoons lemon zeist
4 spoons of Blueberries
2 spoons of whipped cream
1 Muffin mold
1 Filling bakery tube
Let’s do it:
First, mix the yoghurt with the cream and some lemon zeist. When it’s perfectly done, leave it in the fridge.
In another bowl, mix the flour with the leavening, add lemon zeist and two spoons of sugar. When you have it, add the eggs, oil and milk. Don’t whip it to much to try to keep the sponginess of the muffin.
Finally, put the blueberries in the mix and fill the muffins mold until 3/4 of capacity.
Heat the oven at 200ºC and cook during 15 minutes. Remove it and when they’re cold, fill them with the cream we made at the beginning.
