Even you use the word “champagne” as a common name to denominate sparkling wine, the truth is you can only use that name for the wine which is elaborate in the region on “Champagne”, France This kind of wine has its own “denomination of origin” because of that reason.
But…What makes it special? The uncommon thing is they use 3 different grape types, which are only authorized to elaborate the wine: Chardonnay, Pinot noir and Pinot Meunier. They are red grapes but with white pulp and they are only grown and harvested in the region of Champagne. This region, possess unique features that do not occur anywhere else in the world.
The wine has to go through a comprehensive control processes: how they cut the bushes, have a required percentage of alcohol by volume or they have to pass through an artisanal fermentation process inside of the bottle for at least 15 months.
