One night at Estado Puro Ibiza with Paco Roncero

We had the pleasure to assist to the wonderful show cooking of Paco Roncero, 2 Stars Michelin, at Estado Puro Ibiza.

This restaurant is by far one of our favorite on the island. It’s traditional but fancy and experimental and the show cooking was for us awesome.

Before dinner, Paco made a unique demonstration of how he elaborates three of his best tapas: “manchego” cheese ice cream, tuna with mashed lemon and sesame vinaigrette, sweet curry of Iberian.

“Manchego” cheese ice cream

This dish is very special, we loved it! The appearance is one of the biggest point in Paco Roncero’s cuisine. That’s why he always tries to find the perfect texture combination: cheese ice cream, crispy biscuit and tomato jam. Delightful!

Tuna with mashed lemon and sesame vinaigrette

It’s not typical Spanish but who said it had to be… Tuna Tataki with lemon purée seasoned with a sweet soy and honey sauce. At first sight we all thought it was mashed potatoes but we fool ourselves one more time. Well done Paco!

And finally the Sweet curry of Iberian

A specialty of the chef, the curry was just perfect and the meat impressive!!

The Menu also included salmon tartare with sea vegetables, mushrooms on toast with ham, tomato and mozarrella, “patatas bravas” and croquettes of ham, artichokes with quail eggs and trout roe, roll Vietnamese shrimp with mango and green “sisho” and snack steamed Iberian bacon.

One more time, our palate turned crazy with the flavors, textures and tastes. We also must say that all the Estado Puro Ibiza team is very professional and the service was superb.
