‘Peix Nostrum’ travels to Madrid Fusión 2018

The Madrid Fusión International Gastronomy Congress is held annually in Madrid since 2003. Madrid Fusión is traditionally celebrated at the beginning of the year in the Municipal Conference Center, Campo de las Naciones in Madrid. Chefs of enormous prestige have participated in it, both Spanish and the rest of the world.

Peix Nostrum, will shine with its own light in the next edition, which will be held from 22 to 24 January.

The Ibiza chefs José Miguel Bonet, from Es Ventall restaurant in Sant Antoni, and Francisco Javier Marí, head chef at the Can Gat restaurant in Cala Sant Vicent, and the president of the fishermen’s association of Ibiza, Pere Varela, will run a conference about the fish that can be found in our waters.

The chefs will prepare two dishes to show the quality of the Pitiusan cuisine in terms of fish. José Miguel Bonet, nominated in 2017 for the best young chef in Spain, will prepare a recipe of actual cuisine, with pickled “gerret” to demonstrate the powerful flavor of a species that are usually less valued. Francisco Javier Marí will prepare a brine (one of the traditional rock fish) cooked in salt water with lemon, laurel and pepper.

Both chefs and fishermen are very happy with this news, because the congress has a great impact, both nationally and internationally. This action can be a great chance to show all the work that has been done for years to consolidate the traditional cuisine of Ibiza.
