Sofrit pagès, taste of Ibiza | IbizaFoodie
Today we want to talk about a typical dish of these days, sofrit pagès is really well known in Ibiza.
In the past, we used as a dish for day- holiday among pagéses and today we still have a meet around the chimney during winter days to enjoy it.
- 1 chicken, beter if is a free range chicken
- 1 kilo of lamb
- 4 pieces of sausage
- 4 pieces of sobrassada
- 1 kilo of small potatoes
- 1 dried tomatoes
- 1 head of garlic
- Laurel, parsil, sour paprika, safron, olive oil, salt and pepper
How can I cook?
First of all, we make a sauce by garlic, parsil, olive oil, dried tomatoes and safron, while we cook a broth with the free range chicken and other soup with the lamb meat.
When it is ready we put all the ingredients in the saucepan and we cook with the sausage and the sobrassada. We can also add the laurel too.
It´s time to put all the potatoes whitout cut to be roasted and we add the sauce and the meat. We cook in the slow heat.
If we want we can use cinnamon and cloves to decorate.
