Sticky Ribs recipe by Montauk

That’s it!! We finally have the Sticky Ribs recipe by Jose Martinez  Be attentive to the steps. This is the last version of this delicious dish!!

Sticky Ribs:

1 Beef Rib

Cherry Tree Wood

Marinade:

2  cloves of garlic

2 spoons of tomato cream

1 spoon of maple syrup

2 spoons of extra olive oil

1 Spoon of Soy

Salt and Pepper

Beef Juice

Black beer reduction

Sides:

Candied potatoes with butter

Sautéed Baby Spinach

Parnship Purée

How to do it:

Crush all the Marinade items

Clean the Ribs and season it.  Vacuum seal and cook it during 10 hours at 80ºC. Open the bags and strain the juice. Smoke the ribs with cherry tree wood during one hour at 80ºC

Reduce the beer with the juice of the cooking and mix it with the marinade. End the cooking with the ribs on the barbeque and add on it the juice.

Finally on the plate put some Parnship purée, the sautéed baby spinach. Place the ribs next to the candied potatoes.
