UMAMI a different way of understanding Japanese cuisine | IbizaFoodie
Today we wanted to check a new restaurant about which we heard lately a lot: UMAMI. The word UMAMI (う ま 味) means ‘nice flavor’, a perfect name for a restaurant, don’t you think? Inaugurated at the end of August 2017, this small restaurant is raising up the rankings of the best sushi restaurants on the island.
Located next to the church of St Jordi, UMAMI has an intimate space that allows the guests to create a very close relationship with the chefs. We love being able to chat while they prepare our dishes.
Mario and Carlos, Carlos and Mario are the dynamic duo leading the project. Residents on the island for years, they know perfectly the gastronomic offer around the island and they have created their own space to elaborate their creations.
Lovers of the local product, they offer seasonal and local fish from the waters of the island. Local products, of great quality, personally chosen to create unique dishes where freshness is felt at each bite.
The menu has a wide range of Japanese products and specialties that we can’t stop trying. In the menu, there are marked all the allergy and intolerance specifications of each dish, a great success that we applaud as Ibiza Foodie. 🙂
We start with the a delicious appetizer “nabo encurtido”, an authentic recipe “Nabo Daiko” substituted with a product from the island.
We continue with a delicious salad of pickled squid, with seaweed base, vinaigrette with spicy and citrus touches, crunchy onion and radishes. This dish is one of the suggestions of the day that the chefs offer as market cuisine. At UMAMI they use fresh products to make new creations and keep surprising the customers.
The next dish that come is the one that we liked the most: USUZUKURI with salmon and red caviar, chives, wasabi sesame, Japanese sauce and yuzu.
In this dish we can enjoy the fish in its splendor, a fresh and light snacks full of flavor.
Later, they invite us to try some delicious nigiris that leave us speechless: one made of Ibiza squid (my favorite) and one made of tuna belly.
Every day they offer a special and unique variety of nigiri made of freshest fish of the Ibiza market. What we like a lot, is that they use local products from the island and merge them with their cuisine.
We have the opportunity to taste some delicious meat jiaozi cooked with perfection. They just melt in your mouth. Perfect to share and to whet your appetite.
We get to the main course: the Sushi rolls! Mario and Carlos delight us with a selection of their star rolls:
- Roll acevichado (sirvia and purple onion covered with lime, cilantro, ajis and kikos).
- Roll Sant Jordi (avocado, shrimp, cucumber, covered with salmon to the torch, eel sauce, mayonnaise and chives).
- Umami Tuna (Tuna, cucumber, avocado, covered with tuna, cream of foie and miso to the torch with eel sauce).
They also offer home service, perfect for those days when you don’t feel like leaving home but neither you want to give up quality food.

At UMAMI we can find a cuisine made with passion and great care, where the most important thing is to respect the product and enhance its flavor with subtle aromas. There is a perfect balance between quality and price, and the closeness of the chefs with their customers is an aspect that places it in our ranking of favorite Japanese restaurants.
