What we like most in summer are refreshing and light dishes to help us beat the heat and get through the day… and through the night. So today we bring you an original recipe that is slowly gaining fame and can be already found in some restaurants. This is a variant of the traditional gazpacho: the Watermelon Gazpacho.
– 600 grams of vine tomatoes
– 500 g of watermelon without skin or seeds
– 40 g green pepper
– 35 g of onion
– 2 tablespoons olive oil
– 1 clove garlic
– White wine vinegar
Wash properly peppers and tomatoes. Peel the onion and cut into pieces. Also cut the pepper. Peel the garlic and cut it along, reserve these ingredients.
Then we cut the tomatoes into pieces and put it in the bowl of the mixer, also incorporate the garlic, the green pepper and onion we had prepared. Beat all until it reaches a thin mixture.
Let’s now remove the skin and seeds of watermelon, cut it into pieces and put it in the bowl of the mixer. Let’s add the salt, oil and vinegar to taste. We beat everything until it gets fine and thin. Finally we recommend storing it in the fridge to have it very cold, although another option if you like to consume at the moment, is to beat it at the end with crushed ice.
