We interviewed Raúl Gutiérrez the executive chef of Hard Rock Hotel Ibiza

How many years have you been inside a kitchen?

For more than 15 years, although as a child I liked to mess around my mother in the kitchen.

What is your favorite food?

Snails is one of the things I like the most, it could be one of my favorite dishes.

What are the details that you try to capture in all the restaurants of the hotel?

Simplicity, as in life, the simplest thing are the most difficult, being able to create simple and rich dishes is the most complicated thing. Good product and well executed would be one of the things I try to capture.

 What makes every restaurant unique?

Within Hard Rock Hotel Ibiza, we have more Mediterranean  concepts, snacks, or more creative menus like” In Heaven”

 Is there something in particular, a country, a product  that inspires you ?

Practically any country, place or corner of the world can   inspire you to do something. Within my travels that I have made, the scents, products, people and culture of the place can help you to understand better the cuisine. One of my favourites products would be garlic and one of my favourite types of cuisine is the Peruvian cuisine.

What is your most innovative creation for the hotel?

The menus of In Heaven show of The Ninth, that is the part of the menu that we play with for being creative at the time of exposing it to the diner.

What dish can not we miss?

The cause of lobster.

How is your work pace at the hotel?

Your day to day is intense, I deal with many people and I have different restaurants with a great team, I love what I do and I enjoy the day to day. In the simplicity of things is where our happiness resides, that is my day to day.
