Who is Macarena de Castro?
A 36-year-old woman, chef, entrepreneur and Mallorcan.
How would you describe your cooking concept?
To transport my landscape to a plate, to understand the place where I live, to know it and, with the help of a team, to reflect that territory. It seems very easy to say all that, but we have been working for three years with our own agricultural farm and an R & D brigade to be able to live this whole process: from the seed to the tablecloth.
I would stay with the aroma of the family kitchens that I visited as a child, the once of my grandmother or my aunt, that always smelled so good.

Olive oil, garlic and onion.
How does it feel to be the first woman gaining the Michelin Star in Mallorca?
At the beginning a lot of happiness, and then a lot of desire to join more cooks to stop being the only one with that distinction.
You are known as the ambassador of Balearic cuisine, specifically Mallorcan. What are the local star products for you?
The important thing is the freshness of each product at its optimum moment. In each season, there is incredible diversity, quality and flavors. Every fifteen days you could make a different selection of five or six ingredients.
Is there a product from Ibiza that stands out for you?
Maybe the Ibizan potato, but I would like to know more about the island’s food and share the experience of the Ibizan producers. I’m sure I would learn a lot from all of them.
What Ibizan dishes and restaurants do you know?
The bullit de peix, the sofrit pagés and the flaó. And to continue with something traditional, and where you can try dishes like that, I would recommend you Es Rebost de Can Prats.
Would you open a restaurant in Ibiza?
I do not say no, but I would prefer to take the gastronomic advice of an establishment.
